3-Ingredient Banana Oat Pancakes

Ingredients

  • 2 bananas
  • 4 eggs
  • 1 1/2 cups rolled oats
  • OR 1 cup quick oats
  • 30g greek yoghurt (optional topping)
  • OR ricotta (optional topping)
  • OR maple syrup (optional topping)
  • 1 tsp vanilla extract (optional topping)

Method

  • If using Rolled Oats, process in a food processor until fine or resembling a rough flour
  • Add bananas, eggs and vanilla (if using) to the food processor and blitz til well combined.
  • Heat a non-stick pan over medium heat (grease with butter or oil if needed) and pour 1/4 of the batter into the pan (can make smaller if you would like to)
  • Cover with a lid and let it cook away on low-med heat until bubbles form on top. Flip gently and cook the otherside. Repeat for the remainder of the batter.
  • Serve topped with Greek Yoghurt, Berries and Syrup of your choice.

Thermomix Instructions:

  1. Mill the oats on speed 10 for 10 seconds.
  2. Add remaining ingredients and mix on speed 6 for 30 seconds.
  3. Follow steps 3 onwards as above.

Egg Free Adaptation:
This works beautifully with a chia or linseed egg alternative.

Not enough eggs?
If you want to double the recipe or simply don’t have enough eggs, replace half the eggs with a linseed or chia egg alternative:
Linseed Egg: Blitz 1tbsp of linseeds to a fine powder and let soak in 3 tbsp of water for 10minsĀ (per egg).
Chia Egg: Soak 1tbsp of chia seeds in 3 tbsp of water for 10mins (per egg)
