3 Ingredient Fruit Cake


  • 1kg of mixed dried fruit
  • 600mL of Iced Coffee or Chocolate Milk*
  • 2 cups of self-raising flour


  • Place the mixed fruit into a large bowl. Add the iced coffee / chocolate and mix well. Cover and place in the fridge overnight.
  • Preheat oven to 160 degrees (fan-forced). Grease and line a cake tin with oil baking paper and set aside.
  • Stir the flour through the fruit mixture and pour into the prepared tin.
  • Bake for approximately 60-90mins or until the cake springs back when touched in the middle.

* For dairy or low lactose, use a lactose free or dairy free alternative such as almond milk or soy.
