Avocado Boats


  • 1 avocado (ripe)
  • Filling of choice (see notes for variations)


  • Halve the avocado and remove the pit. Leaving the avocado in the skin.
  • Scoop filling of choice into the centre of the avocado.


Baked egg:
Crack an egg into the centre of the avocado and bake at 180C for around 10 minutes. Use a small amount of egg as cooking the avocado for too long may cause it to taste bitter!

Can be served with some additional toppings ie ham or bacon, cheese and herbs.

Fill with 50g of your choice of tinned tuna or salmon (if using an unflavoured variety, add a little bit of mayo or sauce of your choice)

Prepare Mexican filling; cook mince with onion, cumin, ground paprika and chilli. Fill avocado centre with mixture and top with sour cream, salsa and cheese (this option would be great for using up leftovers after tacos or burritos).
