Banana Nut Overnight Oats

Ingredients

  • 1/3 cup rolled oats
  • 1/3 cup milk
  • 1 tbsp chia seeds
  • 1 tbsp natural peanut butter
  • 1/2 tbsp maple syrup
  • 1/2 banana

Method

  • In a jar or small bowl, add in oats, milk, chia, nut butter and syrup. 2.. 3.
  • Stir to combine – but don’t worry if the peanut butter isn’t completely mixed in (as the swirls taste pretty delicious!).
  • Cover with a lid or cling wrap and set in the fridge overnight
  • The next day, top with banana (Berries or Coconut also works well!) and enjoy!
  • Feel free to make a couple of batches, as the oats keep in the fridge for 2-3 days (as long as the milk expiry is within this).

HOT TIP: This is delicious made in an empty peanut butter jar!

 

Gluten free adaptable:
*Use gluten free oats or quinoa flakes.

FODMAP adaptable:
Choose Low FODMAP milk (e.g. lactose free).
Use only small (firm, not overripe) banana and maple syrup instead of honey.
