Caprese Salad


  • 2 cups cherry tomatoes
  • 1 1/2 cups cherry bocconcini cheese
  • 1/4 cups fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • dried oregano
  • salt
  • pepper
  • balsamic vinegar (optional)


  • Prep Ingredients: Halve cherry tomatoes and bocconcini cheese.
  • Sprinkle halved tomatoes with salt and leave in fridge while you prepare other ingredients.
  • Add halved bocconcini to a bowl.
  • Shred basil and add to bowl, along with tomatoes.
  • Drizzle olive oil and sprinkle dried oregano powder over the mixture. Stir.
  • Add pepper or balsamic vinegar for additional flavour!
  • Serve immediately

Lactose adaptable: Bocconcini cheese contains very little lactose and usually won’t upset your stomach if you’re lactose intolerant. However, you can substitute the bocconcini out for some lactose free cheese, just to be safe!
