Carrot Cake Overnight Oats


  • 1/3 cup rolled oats
  • 1/2 cup milk of your choice
  • 1 tbsp chia seeds
  • 1 carrot
  • 1/4 tsp ground cinnamon
  • 1/2 tbsp maple syrup
  • 2 tbsp raisins
  • OR 2 tbsp sultanas
  • OR 2 tbsp dates
  • 1 drop vanilla extract
  • 1 tbsp pecans
  • OR 1 tbsp walnuts
  • 1/2 tsp nutmeg (optional)
  • greek yoghurt (optional)


  • Prep Ingredients: Finely grate carrot, chop dried fruit and nuts of your choice.
  • Mix all dry ingredients in a bowl (oats, chia, carrot, spices, dried fruit).
  • Add in the wet ingredients (milk, vanilla and maple syrup)
  • Place into a jar or container and cover. Leave to soak for at least 2hrs or overnight.
  • Add a little extra milk at time of serving if needed.
  • Top with a dollop of yoghurt and sprinkle of nuts.

Gluten free adaptable:
*Use gluten free oats or quinoa flakes.

FODMAP adaptable:
Choose low FODMAP milk and yoghurt (e.g lactose free, coconut).
Use raisins/cranberries instead of sultanas/dates.

*We recommend using cows milk or coconut milk!
