Carrot Cake Overnight Oats


  • 1/3 cup of rolled oats (uncooked) *
  • 1 x Tbsp chia seeds
  • 1/4 cup carrot, finely grated
  • 1/4 tsp Cinnamon
  • 1/8 tsp Nutmeg (Optional)
  • 2 tbsp of dried fruit - raisins,sultanas or chopped dates
  • 1/3-1/2 cup milk of your choice (cows milk and coconut milk work well)
  • Drop of Vanilla Extract
  • 1/2 tbsp of Maple Syrup
  • 1 tbsp of chopped Pecans or Walnuts
  • Optional: Greek Yoghurt, to serve


  • Mix all dry ingredients in a bowl (oats, chia, carrot, spices, dried fruit).
  • Add in the wet ingredients (milk, vanilla and maple syrup)
  • Place into a jar or container and cover. Leave to soak for at least 2hrs or overnight.
  • Add a little extra milk at time of serving if needed. Top with a dollop of yoghurt and sprinkle of nuts.

Gluten free adaptable:
*Use gluten free oats or quinoa flakes.

FODMAP adaptable:
Choose low FODMAP milk and yoghurt (e.g lactose free, coconut).
Use raisins/cranberries instead of sultanas/dates.
