Cauliflower Pizza Bake


  • 1 cauliflower (medium)
  • 1 tbsp butter (for cooking)
  • 1 onion (small)
  • 1 tsp garlic (fresh or jar)
  • 10 rasher bacon
  • 1 cup ricotta
  • 1 can diced tomatoes
  • 2 tbsp tomato paste
  • 2 1/2 cups cheese
  • 1 tbsp basil and oregano (fresh or dried)
  • salt
  • pepper


  • Prep Ingredients: Dice the onion
  • Preheat oven to 180C and grease an oven pan.
  • To prepare cauliflower, remove stalk and split heads into small florets.
  • Steam cauliflower for around 10-15 minutes until just tender (you want it to be tender but still crisp)
  • Heat butter in a pan and cook onion and garlic until fragrant. Add bacon and crisp.
  • Add in ricotta, diced tomatoes, tomato paste and stir to combine. Add in half the cheese and mix through.
  • Add herbs and season with salt and pepper.
  • To construct, start with a layer of cauliflower, top with remaining sauce and cheese. Repeat layers.
  • Bake for approximately 30 minutes or until cheese lightly browned.
  • Cool before serving.

Lactose free adaptable: Use lactose free cheese to reduce the lactose content of this recipe. Cream and butter already have very little lactose so there’s no need to worry about them!
