Chickpea Omelette


  • 1 1/2 cups of chickpea flour (besan)
  • 2 cups water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/4 cup nutritional yeast (optional)
  • 1 cup cooked mixed vegetables (optional)


  • Preheat oven to 220° C (or 250 fan forced).
  • Place the chickpea flour into a deep bowl and create a well in the centre.
  • Slowly add water while stirring with a whisk until the mixture is well combined.
  • Mix in the tbsp of olive oil salt, and nutritional yeast.
  • Mix in veggies as desired.
  • Place into a wide rectangular baking dish and spread it evenly across the whole dish.
  • Cook for 20-25 min or until it becomes golden brown.
  • Serve with your choice of toppings or as specified in your menu.

Feel free to add in a variety of vegetables and spices to the mix for fun and interesting flavour combinations.

We think veggies such as; spinach, mushrooms and tomatoes work really well!
