Deliciously Nutritious Nuts

Ingredients

  • 1 raw egg white
  • 250g mixed nuts of your choice (pecans, cashews, almonds, walnuts and macadamias all work perfectly)
  • 1 tbsp brown sugar (heaped)
  • OR 1 tbsp sweetener of your choice (heaped)
  • 3/4 tsp salt
  • 3 tsp ground cinnamon (can add more or less based on preference)

Method

  • Preheat oven to 160°C and line a baking tray with grease-proof paper.
  • In a clean, dry bowl, use an electric mixer or food processor to whip egg white to soft peaks.
  • Add the nuts, sugar, salt and cinnamon to the egg mix and stir gently until all combined.
  • Remove the mix from the bowl and lay it out on the tray, evenly and in a single layer.
  • Bake for 12-15mins or until you see the nuts change to a golden brown and become crispy. You may like to stir the mix half way through baking.
  • Allow the nuts to cool on the tray before breaking them up to put in an airtight container. Best stored in the fridge.

Vegan Adaptation:
Use a chia egg in replacement to the egg white, but just no need to whip.

Thermomix Instructions:

  1. Preheat oven to 160 degrees and line a baking tray with grease-proof paper.
  2. Ensure your thermie bowl is clean and dry. Insert the butterfly whisk and whip the egg white for 1min30secs / Speed 5 / MC on.
  3. Add all remaining ingredients to the bowl and combine briefly 20secs / speed 2 / MC on
  4. Remove the mix from the bowl and lay it out on the tray, evenly and in a single layer.
  5. Bake for 12-15mins or until you see the nuts change to a golden brown and become crispy. You may like to stir the mix half way through baking.
  6. Allow the nuts to cool on the tray before breaking them up to put in an airtight container. Best stored in the fridge.
