Easy Baked Eggs


  • 2 eggs (large)
  • olive oil
  • OR melted butter
  • salt
  • pepper


  • Preheat oven to 200°C.
  • Grease 2 x ramekins (or a large muffin pan also works well) with olive oil or melted butter.
  • Prepare chosen filling.
  • Place filling of choice into ramekins/dish, crack eggs on top of filling and season.
  • Bake for approximately 10 - 15 minutes or until egg whites are set (but egg yolk still a little runny).
  • For best results - serve straight away.
  • Delicious served with a simple salad and a side of avocado.


Ham and cheese:
Add 1 slice of ham and 1-2 tbsp grated cheese

Tomato & herbs:
Add 1/4 cup canned tomatoes, 1 tsp basil and oregano (fresh or dried)

Salmon and dill:
Add 50g salmon (fresh, smoked or canned) and 1 tsp dill

Spring onion and chives:
Add 1 tbsp sliced spring onion and 1 tsp chives (fresh or dried)

Mushroom and spinach:
Add 1/4 cup of diced mushrooms and handful of baby spinach.
