Ham, Peach and Halloumi Salad


  • 200g halloumi
  • 3 yellow peaches
  • 2 tsp honey (optional)
  • 400g leg ham
  • 1 cup cherry tomatoes
  • 2 cups rocket leaves
  • 1/4 cup flaked almonds
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 tbsp balsamic vinegar
  • 1 tsp wholegrain mustard
  • 1 tsp honey


  • Prep Ingredients: Slice the halloumi. Slice the yellow peaches into wedges. Shred the leg ham, halve the cherry tomatoes and toast the flaked almonds.
  • Heat a large pan over medium heat. When pan is ready, cook haloumi slices on both sides until browned. Set aside to cool.
  • In the same pan, spread out the peach wedges and drizzle with 1 tsp of honey. Allow the peaches to caramelise before flipping them and repeating the process.
  • Combine ham. tomatoes and rocket leaves in a large bowl. Add peaches and haloumi once cooled.
  • For the Dressing: Whisk together the olive oil, lime juice, balsamic vinegar, wholegrain mustard and honey until well combined.
  • Drizzle over the salad and sprinkle with flaked almonds.
  • Serve as a side salad or as specified in your nutrition program.

Low-Lactose alternative: Limit you serving of halloumi to less than 4 small slices or select a low lactose cheese.

Dairy-Free alternative: Replace the halloumi with a dairy-free alternative.

Low carb, healthy fats: To reduce the carbs even further, limit the use of honey on the peaches or in the dressing. Add additional almonds to offset the energy lost from the honey.
