Home-Made Beans

Ingredients

  • 1 tbsp olive oil
  • 1 brown onion
  • 1 garlic clove
  • 4 rashers shortcut bacon (optional)
  • 800g canned diced tomatoes
  • 800g canned cannellini beans
  • 1 tbsp fresh basil
  • OR 1 tbsp fresh parsley
  • OR 1 tsp of dried parsley
  • 1 pinch salt (optional)
  • 1 pinch pepper (optional)
  • 1 tsp brown sugar (optional)

Method

  • Prep Ingredients: Finely chop brown onion and fresh basil, crush garlic clove, dice bacon rashers and drain and rinse cannellini beans.
  • Heat oil in a pan over medium-high heat and add onion, garlic and bacon. Sauté until onion and bacon are lightly browned.
  • Add tinned tomatoes and simmer gently for a few minutes to thicken.
  • Add beans, salt, pepper and sugar to the pan and cook for another 5-10mins over medium heat.
  • Meanwhile, prepare your eggs as preferred and cook your toast
  • Stir through the herbs.
  • Serve on hot buttered toast (with the sides as specified in your plan).

SLOW COOKER: These can be made in the slow-cooker in advance – we love waking up to breakfast being already cooked! Place all ingredients in the slow cooker and cook on low for 6-8 hours. You can sauté the onion, garlic and bacon first if preferred
