Homestyle potato salad

Ingredients
1kg baby potatoes
1/2 bunch spring onions
1/2 red onion
2 tbsp chives (fresh or dried)
2 1/2 tbsp greek yoghurt
1/3 cup mayonnaise
2 tsp seeded mustard
Method
Prep Ingredients: Wash baby potatoes but leave the skin on. Trim and finely slice the spring onions, finely dice the red onion.
Add potatoes to a large pot of water and boil until just soft (~5minutes).
Drain, cool and set aside.
Add potatoes, spring onion, red onion and chives to a large bowl and mix together to combine.
Add yoghurt, mayonnaise and mustard and combine.
Keep refrigerated.
Notes
Vegan and dairy free adaptable:
Use vegan yoghurt and mayonnaise alternative (e.g soy yoghurt).
