Lemon Slice Bliss Balls


  • 1 cup cashews
  • OR 1 cup macadamias
  • 1 cup rolled oats (or Quinoa Flakes for GF option)
  • 1/2 cup coconut
  • 10 medjool dates (or, soak 1/2 cup dried dates in boiling water then drain)
  • 1 lemon
  • 2 1/2 tbsp coconut oil (optional)
  • 1/2 tsp vanilla extract
  • 40g vanilla protein powder
  • extra shredded coconut (for rolling)
  • OR extra desiccated coconut (for rolling)


  • Prep Ingredients: Deseed the medjool dates, juice and zest the lemon and melt the coconut oil (if using).
  • Place the nuts, oats, coconut, dates, lemon juice & zest, oil (if using), protein and vanilla to the food processor or stick blender. Blitz until all the nuts are crushed and the mix forms a dough (Add 1-2 tbsp of water if mix is too dry).
  • Pour coconut in a small bowl.
  • Roll dough into teaspoon sized balls and then coat with coconut.
  • Place in a container and set in the fridge for at least 30mins;
  • Say a big hello to a sweet & zesty snack on hand throughout the week!
