Lentil and Sausage Skillet
1 small onion, thinly diced
1 carrot, thinly diced
2 celery stalks, thinly diced
2 garlic cloves, sliced
2 tbsp olive oil
5 mushrooms, sliced
2 zucchinis, diced
4 lean sausages, cut into segments
400g canned lentils, drained
1 stock cube* OR 1 cup of liquid stock
Salt and pepper to taste
Pasta, Rice or Zoodles according as specified in your program
Add onion, carrot, celery and oil to a skillet and cook on high heat until veggies soften.
Add garlic, mushrooms and zucchinis and allow to cook for 2-3 minutes.
Layer in sausages and lentils and continue cooking for 2-3 minutes on high heat.
Pour stock and passata into the mixture, combining with bay leaves and oregano.
Continue cooking over moderate to high heat for 15-20 mins or until the sauce thickens.
Serve with pasta, rice or zoodles as specified in your program.
* Dissolve stock cube in 250ml of boiling water
