Lentil and Sausage Skillet
1 onion (small)
2 celery stalks
2 garlic cloves
2 tbsp olive oil
4 lean sausages
400g canned lentils
1 stock cube
OR 1 cup liquid stock
700g passata (1 jar)
OR zoodles (or as specified in your program)
Prep Ingredients: Thinly dice onion, carrot and celery stalks. Slice garlic cloves and mushrooms. Dice zucchinis, cut lean sausages into segments and drain lentils.
Add onion, carrot, celery and oil to a skillet and cook on high heat until veggies soften.
Add garlic, mushrooms and zucchinis and allow to cook for 2-3 minutes.
Layer in sausages and lentils and continue cooking for 2-3 minutes on high heat.
If using a stock cube, dissolve this in 250mLs of boiling water.
Pour stock and passata into the mixture, combining with bay leaves and oregano.
Continue cooking over moderate to high heat for 15-20 mins or until the sauce thickens.
Serve with pasta, rice or zoodles as specified in your program.
