Mexican Style Salad

Ingredients

  • 400g canned black beans
  • OR 400g canned kidney beans
  • 300g corn kernels
  • 1 capsicum (medium)
  • 1 cucumber (large)
  • 3 tomatoes (medium)
  • 1 avocado
  • 2 garlic cloves
  • 3 spring onions
  • 1 lime
  • 1 tbsp sweet chilli sauce
  • 2 tbsp olive oil
  • 1 tsp cumin seeds
  • salt
  • pepper

Method

  • Prep Ingredients: Drain and rinse the beans. Juice and zest the lime.
  • Chop the capsicum and spring onions, dice the tomatoes and avocado and slice the cucumber. Crush the 2 garlic cloves.
  • Combine all ingredients in a bowl.
  • Let stand at least 15 minutes for flavors to combine, then toss and serve.
