Mexican Tomato Salsa

Ingredients

  • 1 punnet cherry tomatoes
  • OR 2 1/2 tomatoes
  • 1 red onion (small)
  • 1/2 capsicum (medium)
  • 1 lebanese cucumber (medium)
  • 1 avocado (medium)
  • 1 lemon

Method

  • Finely chop all vegetables and toss together in a bowl.
  • Squeeze lemon juice over the salsa (helps to prevent the avocado from going brown).
  • Season to taste.
