Nut-Free Coconut Rough Balls

Ingredients

  • 1/2 cup sunflower seeds
  • 1/2 cup pepitas
  • 1/2 cup shredded coconut
  • 3/4 cup rolled oats (or quinoa flakes if gluten free)
  • 2 tbsp cocoa powder
  • 2 tbsp coconut oil
  • 10 medjool dates (or 1/2 cup of dried dates soaked in boiling water then drained)
  • 1/2 tsp vanilla
  • 2 tbsp water

Method

  • Prep Ingredients: Deseed the medjool dates and melt the coconut oil.
  • Place all ingredients (except water and extra coconut) in a food processor or stick blender attachment and blitz until mix forms a dough.
  • If mix is too dry to roll into balls, add 1-2 tbsp of water gradually until mix starts to come together.
  • Roll dough into teaspoon sized balls and then coat with coconut
  • Place in a container and set in the fridge or freezer for at least 30mins
  • These delicious treats will keep in the fridge or freezer for weeks - if they last that long!
