Oven Baked Zucchini Fries


  • 2 zucchinis (small)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tbsp parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • olive oil spray (for cooking)


  • Prep Ingredients: Slice zucchinis into matchbox sticks.
  • Preheat oven to 180C and line an oven tray with foil or baking paper.
  • Crack egg into a small bowl, whisk mildly with a fork.
  • Combine breadcrumbs, cheese, onion powder and garlic powder in a bowl.
  • Coat zucchini in egg and dip into breadcrumb mixture. Repeat until all zucchini slices are coated.
  • Place zucchini on tray, spray with olive oil and bake for around 30 mins (turn at half way).

Vegan, dairy free adaptable:
For egg substitute use egg replacer (store bought) OR 1 Tbsp ground flaxseed + 3 tbsp water.
Use plant based cheese alternative.

Gluten free adaptable:
Use gluten free breadcrumbs.

Lactose free adaptable:
Use lactose free cheese or leave out.

FODMAP adaptable:

Omit garlic and onion powders
