Pork and Chickpea meatballs

  • 200g pork mince
  • 1/2 400g tin of chickpeas
  • 1/4 cup feta
  • 1 clove of garlic, minced
  • 1/4 cup of chickpea flour (or breadcrumbs)
  • 1 tsp Nutmeg
  • 1 tsp Oregano

  • Mash chickpeas using a food processor or simply a fork, ensuring you also leave some whole chickpeas for texture and flavour
  • Add mince, feta, garlic and chickpea flour. Mix together until ingredients are well formed
  • Add nutmeg, oregano, salt and pepper and continue stirring
  • In a small pan, heat a small amount of oil on high heat.
  • In the meantime, roll mixture into small balls.
  • When oil is hot and ready, add meatballs and cook with lid on.
  • Turn every 2-3 minutes to cook evenly on all sides.
  • Serve with quinoa/rice and veggies.

Lactose-free variation: Swap the feta out for a lactose-free cheese or cheeses which are lower in Lactose (e.g. Halloumi)

Dairy-free version: Dairy-free cheese will still work in these meatballs.
