Rice Cooker Pilaf


  • 1 onion
  • 1 garlic clove
  • olive oil
  • 1 cup basmati rice (if using wild or brown rice, see notes)
  • 500g protein of your choice
  • 2 cups chicken stock
  • 5 1/2 cups frozen mixed vegetables
  • Flavouring of your choice:
  • 3 tbsp sun-dried tomato pesto
  • OR 3 tbsp basil pesto
  • OR 2 tsp curry paste
  • OR 1 tsp chilli flakes & 1-2 tsp of italian/greek seasoning


  • Prep Ingredients: Chop onion, crush garlic clove and slice protein of your choice into chunks.
  • Optional Step: Heat rice cooker by switching to 'cook'. Add oil and fry off garlic and onion until fragrant the brown chosen protein. Switch back to the warm position.
  • Add all ingredients (except for any smaller/faster cooking veg), including your chosen flavours, to the rice cooker.
  • Turn to cook function.
  • After 10mins, remove the lid and give it a stir. Add the smaller/faster cooking veg.
  • Continue to cook until all of the stock is absorbed and the rice is tender.

If using brown or wild rice, this will need 1.5 – 2 x the amount of fluid, so for every 2 cups of stock, add an additional 1 cup of water.
