Strawberry & Chocolate Coconut Rice Cakes


  • 3 cups uncooked sticky rice
  • 4 1/2 cups of water
  • 3/4 cup coconut milk
  • 1/4 cup raw sugar
  • 1 tbsp lemon juice
  • 3 tbsp maple syrup
  • 1 1/2 tsp salt
  • 170g chocolate chips
  • 1 1/2 cups fresh strawberries


  • Combine rice, water and a dash of salt in a rice cooker and allow to cook
  • Once cooked, transfer rice to a large bowl and add coconut milk, sugar and lemon juice
  • Combine and add salt to taste
  • Allow rice to cool then spread half onto a square baking tray and press mixture down
  • Sprinkle chocolate chips and strawberries evenly over the rice
  • Gently press the remaining rice over the strawberries and chocolate
  • Allow to set in refrigerator then cut up and wrap
