Sweet Potato and Date Bread


  • 10 dates
  • 1/2 cup wholemeal self-raising flour
  • 1 cup wholemeal all-purpose flour
  • 1/2 medium sweet potato
  • 1 tsp vanilla extract
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • OR 1/4 cup honey
  • 1 tsp cinnamon
  • 2 eggs
  • 2 tsp baking powder
  • 3/4 tsp bicarb soda
  • 1/4 tsp salt


  • Prep Ingredients: Soak dates for 15 minutes in warm water. Meanwhile peel the sweet potato.
  • Pre-heat oven to 180 degrees fan-forced
  • Steam 1/2 peeled sweet potato until soft and tender (mash like consistency)
  • Soak the 10 dates in hot water
  • In a bowl, combine the flour, cinnamon and salt together
  • In a seperate bowl, combine the oil, vanilla extract, eggs and maple syrup
  • Remove the water from the dates
  • Once the sweet potato is cooked, place in a bowl with the soaked dates and combine well to a smooth consistency. It may be easier to use a blender or thermomix if you have one.
  • Combine the wet and dry ingredients together
  • Line a baking tin and pour the batter into the tin
  • Cook for 40 minutes or until a skewer inserted comes out clean
  • Allow to cool for at least 15 minutes.. then ENJOY!

Gluten-Free Alternative: Use GF flour and baking powder for a GF option
