Tropical Overnight Oats

Ingredients

  • 1/3 cup rolled oats (uncooked)
  • 1/3 cup milk of your choice
  • 1 tbsp chia seeds
  • 1 tbsp shredded coconut
  • 1/2 tbsp maple syrup
  • OR 1/2 tbsp honey
  • 1/4 cup mango chunks
  • 1/4 cup canned pinapple chunks
  • 1/4 cup strawberries

Method

  • In a jar or small bowl, add in oats, milk, chia, shredded coconut and syrup.
  • Stir to combine. Cover with a lid or cling wrap and set in the fridge overnight
  • The next day, layers oats with mango, pineapple and strawberries (Extra coconut also works well!) and enjoy!
  • Feel free to make a couple of batches, as the oats keep in the fridge for 2-3 days (as long as the milk expiry is within this).

Gluten free adaptable:
*Use gluten free oats or quinoa flakes.

FODMAP adaptable:
Choose Low FODMAP milk (e.g. lactose free).
Remove mango and use 1/2 small banana instead. Use maple syrup instead of honey.
